The Cheeseburger

Name: The Cheeseburger
Ingredients:
1 oz Flor de Cana 7-year rum

2 muddled Roma tomatoes
1 oz iceberg lettuce water*
1 oz beef (well reduced)
2 tbsp toasted bread crumbs
1 tsp dry mustard powder
2 tbsp aged cheddar
1 large Kosher dill pickle
Salt and pepper to taste

Preparation:
Heat pan to medium, sprinkle in cheddar, and use the sides of a spoon to gather cheese into a circle. Brown and remove from pan to cool on a plate. Mix breadcrumbs with dry mustard and wet the rim of a glass with pickle juice and dip in crumb mixture.

Muddle tomatoes and ice in a glass and slowly pour in lettuce water*. Stir rum and beef juice together in a shaker and float over ice. Sprinkle with salt and pepper and garnish with cheddar and a pickle knot.

*To make lettuce water, put a wedge of lettuce through a juicer or food processor and liquify.

Garnish:
cheddar and a pickle knot
