Yield: Makes 1
Ingredients:
- 2 ounces Chamomile & Mint Tea-Infused Plymouth Gin*
- 3/4 ounce lemon juice
- 3/4 ounce honey syrup (equal parts honey and water)
- 3/4 ounce egg white
- Ice
- Mint leaf
Preparation:
- Add all ingredients to a mixing glass and shake without ice to emulsify the egg white.
- Add ice and shake.
- Strain into a cocktail glass and garnish with mint leaf.
- To infuse the gin, add 10 heaping bar spoons of chamomile tea, and 10 heaping bar spoons of mint tea to 1 bottle of gin.
- Let it sit for an hour, then strain.
- Funnel the gin back into the bottle for use.
